Use 308L for 304-grade stainless and 316L where corrosion resistance must be higher. Run pure argon, keep heat input low to preserve corrosion resistance, and consider back-purging on pipe and food-grade work so the underside doesn't sugar (oxidise) and lose its stainless properties.
